It's all about speed.

From my experience, you lean back just a bit, and keep your speed up enough not to sink. Hard to actually give a certain speed to hold, you can go as fast as you want, just don't slow down so much you sink...

Start with something small, I wouldn't try Lake Erie the first time, maybe a small shallow pond in a river or something, and work your way up...
